This simple recipe for dee-lish chocolate pudding came from Ellie Krieger who never disappoints me. She titled it Grandma's Chocolate Pudding. However, since it didn't come from my grandma, I renamed it Velvety Smooth Lowfat Chocolate Pudding because it is all that… lusciously velvety smooth with a reduced fat content compared to traditional pudding recipes that call for egg yolks and butter. Additionally, it is less sweet than other versions… just right.   

Velvety smooth chocolate pudding 

Velvety Smooth Lowfat Chocolate Pudding

1/3 cup sugar

2 tbsp unsweetened cocoa powder

3 tbsp cornstarch

2 cups 1% lowfat milk (I used whole milk.)

1 ounce dark (60-70%) chocolate, finely chopped

whipped cream, optional

In a medium saucepan or double boiler, whisk sugar, cocoa, and cornstarch. Gradually add the milk, whisking until smooth. Continue whisking until the mixture thickens and comes to a boil, about 6 minutes. Boil for 1 minute. Add the chopped chocolate stirring until melted and smooth. Serve topped with whipped cream, if desired. Makes four ¾-cup servings.

    I’m excited about looking into the book, “A Homemade Life”. I, too, like to go to bed with cookbooks.

    As always, your recipes are sure to please. Our 6-year-old pleaded for me to make another batch of your pudding. This is especially telling of it’s tastiness for two reasons:
    1. I had already doubled the recipe and she was eating 2 servings full.
    2. She had just begun eating, and so still had plenty left…but wanted more waiting when she was done!

    Thank you for sharing the chocolate avocado pudding recipe, Jackie. Having originally run across a similar pudding recipe on a raw food site, I have made it several times. It’s so creamy and easy and a great way to incorporate the nutrition of avocados and chocolate. This velvety chocolate pudding recipe is a must-try. It has low sugar and no eggs… very few ingredients so it goes together quickly. It’s richness comes from the 70% dark chocolate that is added at the end. Dick and I stopped by the Good Earth Co-op in August to discover that it had doubled in size! We enjoyed two bowls of chicken white bean chili in the newly expanded deli that did not disappoint! I even purchased a container to take home. The expansion allows room to stock additional items, but I must admit that I miss the tiny little corner where Dick and I formerly shared a meal of soup.

    I’ve lost track of how many times I have made this pudding. I’m thinking that it may soon be the case for you as well, Heather, based upon your 6 year-old’s pleading.
